Ingredients

Focaccia bread

Smoked Trout 80g

Handful of Rocket

Sliced ⁠Heirloom Tomato 1 pcs

Taramasalata 1 tbsp 

Pickled cucumber 1 tbsp

Instructions

  1. Toast the bread under the salamander for 2 minutes each side (top and bottom), then cut in half half and toast the inside as well.
  2. Spread taramasalata on each slice of bread and place cucumber on the top half, rocket on the bottom half.
  3. Top the bottom half with smoked trout and 4 slices of heirloom tomato.
  4. Close the sandwich, wrap in paper to hold it together, then cut in half to serve.
