Grilled Mackerel Baguette

Ingredients

Baguette 

Handful of Cos Lettuce 

Tartare Sauce 3 tbsp 

Sliced Cucumber 

Smoked Mackerel Fillet 180g

Pickled Red Onion 2 tbsp

Instructions

  1. Heat the baguette in the oven at the bottom shelf for 5-6 mins at 220C.
  2. Grill the mackerel with a drizzle of olive oil in a pan or on top of the flat top grill, flesh side first until cook through but not dry inside.
  3. Cut the tips of the bread, spread tartare sauce both sides.
  4. Put the lettuce at the bottom side of the bread, cucumber on the top side. Place the fish on the lettuce and top with pickled red onion
  5. Cut in half and serve.
