Instructions
- Heat a skillet over medium-high heat, add oil
- Pat scallops dry, with salt and pepper
- Place scallops in pan, cook for 2 mins
- Meanwhile, cook bacon to desired finish in a separate pan (we like ours slightly crispy)
- Flip when golden and easily released, then lower heat
- Optional: add butter, garlic, and herbs
- Baste for 30 secs - 1 min
- Slice bun, lightly butter the insides, then lace cut side down in the pan and toast for 1 - 2 mins until golden brown
- Top the bottom half of each bun with three bacon rashers and three scallops.
- Drizzle generously with hollandaise, then add the lid to serve
