300g Mayonnaise 

10g Curry powder

5g Smoked paprika

Juice of ½ a lemon

For each cocktail

30g Shredded gem lettuce

10g Julienne cucumber


50g Cooked lobster meat, diced

½ a 550-650 lobster should do two.


30g White crab meat 

20g Brown crab meat


60g Cooked peeled prawns


To make the cocktail sauce
  1. Toast the spices in a pan.
  2. Cool and mix with the mayo and lemon juice.

Arranging your cocktail
  1. Divide the shredded the gem lettuce and julienned cucumber between the 2 serving glasses.
  2. Mix the seafood of your choice with the sauce then spoon into each glass.
