All our crab meat is sourced from sustainably pot-caught British crab, carefully picked and prepared in Devon. The crabs are steamed, rather than boiled to ensure a maximum flavour profile and the brown meat is pasteurised for a longer shelf-life.
Pots are a selective and passive form of fishing causing no damage to the marine environment. Most importantly, the crab is alive when bought to the surface. This means if the crab is undersize or has recently shed its shell, it will be returned to the sea allowing it to grow and breed again.
The distinctive brown meat comes from the top of the shell cavity and is creamy and rich. For those that enjoy the umami taste it can be spread on toast like pâté, but is often used in soups, sauces and stocks to add depth of flavour.

Crab are sourced wild, so due to poor weather conditions we may occasionally have to replace it with frozen brown crabmeat. The quality of product will remain the same, but we do not recommend refreezing once defrosted. The daily fish market closes very early, so when ordering for 'next day' delivery, if fresh crab is unavailable, we will use (previously) frozen crab.

We also recognise seasonal and regional catch opportunities and often for lesser-known species, that although not always viable for the larger boats, represent an important part of local fishing community sustainability for the smaller vessels.
