Grilled Sardines and Gremolata

This simple recipe by Head Chef Gareth delivers a zesty freshness and perfectly crispy skin.

Ingredients

16 Sardines

20g Flat leaf parsley

2 Lemons

4 Cloves of garlic 

Olive oil

Instructions

1. Chop the parsley finely, with the stalks.
2. Grate the zest of the lemons, and the garlic on a box grater.
3. Mix all the above.
4. Grill the sardines for 6 mins, turning once halfway through.
5. Dress the sardines with a little extra virgin olive oil, sea salt and lemon juice.
6. Sprinkle the gremolata over the sardines.
