Roast Scallops

Crispy roast potatoes are essential on every Christmas dinner table, but why not surprise your guests with a potato lookalike made with our incredibly fresh scallops.

24 large scallops 

20g butter 

Quarter lemon, juiced

Seasoning – salt and pepper 


  1. Carefully remove the scallops from the shells
  2. Trim off the skirt and coral from each scallop
  3. Heat the butter in a saucepan and melt over a high heat
  4. As soon as the butter starts foaming, add the scallops
  5. Cook for 4 minutes and keep the scallops moving as the butter caramelises
  6. Once the scallops are golden brown, squeeze the lemon and remove from the pan. Sprinkle with salt and pepper for seasoning
