Bacon and Scallop Roll

Follow our quick and easy recipe for a traditional fisherman's breakfast roll using premium bacon and scallops from Wright Brothers At Home, our online fishmonger.

Ingredients

6 Scallops 

6 Bacon Rashers

2 Brioche Buns

Hollandaise Sauce (recipe here)

Instructions

  1. Heat a skillet over medium-high heat, add oil
  2. Pat scallops dry, with salt and pepper
  3. Place scallops in pan, cook for 2 mins
  4. Meanwhile, cook bacon to desired finish in a separate pan (we like ours slightly crispy)
  5. Flip when golden and easily released, then lower heat
  6. Optional: add butter, garlic, and herbs
  7. Baste for 30 secs - 1 min
  8. Slice bun, lightly butter the insides, then lace cut side down in the pan and toast for 1 - 2 mins until golden brown
  9. Top the bottom half of each bun with three bacon rashers and three scallops.
  10. Drizzle generously with hollandaise, then add the lid to serve
