Spiced Rum Glazed Grilled Prawns

This grilled prawn recipe features a zesty marinade with lime, honey, spiced Mermaid rum, ginger, garlic, and cayenne. Marinated prawns are grilled until bright pink and tender, then finished with a coriander glaze and served with lime wedges.

1. Mix lime zest and juice, honey, rum, ginger, garlic, and cayenne in a saucepan, whisking until well combined.

2. Bring the mixture to a boil over medium heat, cook for 1 minute, then let it cool completely.

3. Place the prawns in a shallow dish and pour half of the marinade over them, adding olive oil. Cover and refrigerate for at least 1 hour or up to 8 hours.

4. Preheat the grill to 180 C 

For Cooking:

1. Sprinkle prawns with salt and pepper, grill for 1 minute, brush with marinade, and turn.

2. Cook for another 2 minutes, basting generously with more marinade until the shrimp are bright pink on the outside and white on the inside.

3. Stir chopped coriander into the remaining marinade and pour over the hot prawns, serving with lime wedges on the side.

20 prawns 
1/2 cup lime juice (freshly squeezed)
1/4 cup coriander 
1 lime (zest)
3/4 cup honey
1/2 cup spiced rum
2 teaspoons fresh ginger root (grated)
1 clove garlic (chopped fine)
Sea salt and pepper
