Sea Lettuce Sprouts

The nation is torn between lovers and haters of Brussel Sprouts, but with our new creative recipe, everyone will be a lover. With a perfect resemblance, our sprouts are made using sushi rice and sea lettuce.

1 cup sushi rice 

1 cup water 

1.5 tsp unseasoned rice vinegar 

2 tsp sugar 

1 tsp Maldon salt 

100g sea lettuce 


  1. Rinse the rice under cold running water, until the water runs clear
  2. Drain the rice and pour into a medium saucepan with 1 cup of water
  3. Bring the rice to the boil then cover and simmer for 10 minutes. Remove from the heat and leave to cool
  4. Heat the rice vinegar and sugar until the sugar has completely dissolved and then drizzle over the rice to season
  5. Wet your hands with water and roll the rice into sprout shaped balls
  6. Rinse the sea lettuce with cold water
  7. Carefully wrap each rice ball with layers of the sea lettuce, until it resembles sprouts. Season with a sprinkle of salt
  8. To reheat, you can easily steam the balls for 5 minutes
