Our brilliant chef has given the traditional Pigs in Blankets a fish-licious twist with poached oysters wrapped in smoked tuna.

Ingredients

120g smoked tuna loin, sliced 

12 Carlingford oysters 


Instructions

  1. Carefully shuck the oysters – you can learn how to shuck oysters like a pro here. Remove from the shell and reserve the juice
  2. Place the juice and oysters into a small saucepan and bring to a low simmer
  3. Remove from heat. The oysters should be plump and firm to touch
  4. Wrap each oyster in the thinly sliced smoked tuna loin until they resemble pigs in blankets
