Hollandaise Sauce

Ingredients

3 egg yolks

Lemon Juice 1 tbs

Dijon 1 tsp

Salt 1/4 tsp

Cayenne Pepper 

Butter 60g

Instructions

  1. Heat the butter in the microwave for about 1 minute until it’s fully melted and hot.

  2. In a high-speed blender, combine the egg yolks, lemon juice, Dijon mustard, salt, and a pinch of cayenne. Pulse on high for about 5 seconds.

  3. With the blender running on low, slowly drizzle in the warm butter until the sauce emulsifies.

  4. Transfer the hollandaise to a small serving bowl and spoon it over your dish.
