Caper and anchovy dressing

Capers have such a burst of flavour and work great with the sweetness of the garlic.

30g capers

20g tinned anchovies

1 clove garlic

40g parsley

10g mint

20g white wine vinegar

160ml extra virgin olive oil

500g Purple sprouting broccoli


  1. Grate the garlic, or use a garlic press to crush, and add to a small mixing bowl.
  2. Finely chop the capers, anchovies, mint and parsley together, and add to the garlic.
  3. Add the olive oil and vinegar and leave until the rest of the dish is ready.

Either steam or blanch the broccoli when everything else is ready to serve, plate alongside the lamb with the caper and anchovy dressing in a bowl…
