Cajun Prawn Tacos by Emily (Good Mood Food UK)

Cajun tacos stuffed with succulent prawns, tangy slaw, avocado and charred corn. A delightful recipe created by Emily @goodmoodfood.uk and is perfect to enjoy all year round.

Ingredients

  • 500g Raw Peeled Prawns, defrosted
  • 1 tbsp Cajun seasoning 
  • 2 tbsp olive oil 
  • 12 small tortilla wraps, warmed
  • 1 x 198g can sweetcorn, drained
  • 2 avocadoes, sliced
  • 2 limes, quartered
  • 50g feta
  • 1 red chilli, thinly sliced (optional)
  • 2 spring onions, thinly sliced (optional)
  • Handful of coriander

Slaw:

  • ½ small red cabbage, shredded
  • 2 carrots, thinly sliced
  • 1 red onion, diced
  • 250ml mayonnaise
  • Juice of 1 lemon
  • 2tbsp cider vinegar
  • 1tsp wholegrain mustard
  • 1tsp salt
  • 1tsp honey


Instructions

  1. First off, prepare the slaw. Add the shredded cabbage, onion and carrots to a large bowl.
  2. In a small bowl, combine the mayonnaise, lemon juice, cinder vinegar, mustard, salt and honey. Mix until well combined and season generously.
  3. Add the mixture to the vegetables and toss well until fully coated. Cover and keep in the fridge until serving.
  4. Preheat the grill to high. Add the drained sweetcorn to a lined baking tray, drizzle in 1tsp oil and grill until slightly charred. Remove from oven and set aside.
  5. In a large frying pan on medium heat, add 2tbsp oil. Once hot, add the prawns and Cajun seasoning, tossing well to ensure they coated.
  6. Fry for 2-3 minutes until cooked through.
  7. Assemble the tacos! Add a tablespoon of slaw to each warm tortilla then top with avocado slices, prawns, corn, feta, spring onions, chilli and coriander.
  8. Add a squeeze of fresh lime then tuck in!
