Blackened Salmon Rub

The blackening technique is cooking that involves brushing melted butter onto fish or meat, then dredging it through a spicy dry rub of seasonings. The cooking process takes place very quickly, because it's done at a high temperature. Essentially, you are searing the spices onto the food.


Food that is blackened isn't burnt; it's simply coated in a special spice blend that takes on a very dark brown, almost black color when cooked in a skillet, on a grill or in an oven.

Ingredients

Burnt spring onion powder 

Sumac 

Aleppo chilli

Onion powder 

Garlic powder 

Paprika 

Salt

Pepper

Instructions

  1. Mix together equal amounts of spices
  2. Add salt & pepper to taste
  3. Brush piece of fish with melted butter or oil then rub in the spice mixture
  4. Grill or oven bake until core temperature is 55c
