  1. Cook Sushi Rice

    Cook the perfect Japanese rice (see our recipe page). Allow it to cool down.

  2. Make the marinade

    Mix together in a bowl 2 tbs olive oil, 1 tbs sesame oil, 1 tbs soy sauce, 1 tbs rice vinegar, 1 tbs honey, 1 tbs ginger, 3 cloves of minced garlic, 1 tbs sesame seeds and 2 spring onions sliced. Whisk it all together then add the cubed Var Salmon. Leave to marinate for at least an hour or overnight

  3. Prepare the muffin tin

    Cut the Nori sheets into squares. Place a square into palm of hand. Dip a spoon in water so the rice doesn't stick so much and put a spoon of rice on the centre of the nori square. Wet your fingers and then shape the rice into a nice little circle. Then transfer the square into the muffin tin slot.

  4. Make the Salmon Muffins

    Once all the muffin slots are filled with the Nori squares and rice you can add your salmon marinade. Fill each muffin slot 4-5 cubes of marinated salmon. Then bake in pre-heated oven for 15 minutes at 200c

  5. Prepare the glaze

    In a large bowl add 1 tbs toasted sesame oil, 2 tbs honey, 2 tsp soy sauce, 1 tsp Sriracha sauce, 1 tsp ginger and 1 tsp sesame seeds. Whisk the ingredients together. Once the muffins are cooked, plate them up on a serving platter and pour over the glaze. As an optional garnish sprinkle with sliced spring onions and shredded carrots.
