In the late 70s, an ecological mistake introduced Kennet crayfish to British waters, where they began "muddying the water" by collapsing banks and destroying fish stocks. They turned the tide. By harvesting these invasive "mini lobsters," we offer you a rare luxury that tastes as good as the conservation work. Refined, wild, and naturally sweet, it’s the ultimate ingredient for the environmentally-minded chef.
Cleaned for 3 days in fresh Kennet water. Humanely stunned and bio securely handled.
