As St. Patrick's Day approaches, it's the ideal time to celebrate the iconic pairing of oysters and stout. With deep historical roots dating back to the 18th and 19th centuries in Ireland and the UK, this beloved tradition continues to be on the rise. Oysters, known for their nutritional richness, were hailed as the hero food for coastal residents (still a hero food in our eyes), while dark and malty beers like stouts rose in popularity in the same regions. The brininess of oysters perfectly complements the rich flavours of stout, giving rise to the cherished tradition of enjoying them together. When we opened our first restaurant in Borough Market in 2005, we we're inspired by this tradition - dedicated to serving good pints, good oysters, and great times.

But what makes this pairing so special? It's all about the synergy between contrasting flavours and textures. Oysters' delicate and salty flavour contrasts beautifully with the deep, roasted, and slightly bitter notes of stout. The creamy texture of oysters pairs wonderfully with the silky, smooth mouthfeel of stout. Plus, the carbonation in stout helps cleanse the palate between bites of rich, briny oysters, ensuring each mouthful remains fresh and oceanic. This serves as a helpful tip if you're sampling a range of oysters, whether from our specials or house selection in our restaurants.

Fresh Carlingford Rock Oysters come from the medieval village of Carlingford, located just 50 miles north of Dublin. Hand-nurtured over three years in Carlingford Lough, these oysters undergo meticulous care to ensure perfection. From their humble beginnings as fingernail-sized mollusks to their handpicked selection and purification process, each oyster embodies the rich heritage of Ireland.

To accompany our Irish oysters, we proudly present our own WB Oyster Stout, crafted in collaboration with The Harbour Brewing Co. Founded in 2012 with a vision to brew beer reflecting the land and shores from which it came, The Harbour Brewing Co. takes pride in using the best raw ingredients and techniques. Their dedication to quality and heritage results in a bittersweet caramel and nutty aroma that perfectly complements the freshness of our oysters. Available to be enjoyed fresh on draught in restaurants or conveniently in 330 ml cans from Wright Brothers At Home.
