Being one of humanity's oldest foods, oysters were affordable and widely enjoyed by all. Overfishing, pollution and other factors led to a decline in their abundance, transforming them into a rare delicacy. Even when we started in 2002, oysters were only eaten by a select few. Since then, our mission has been to make oysters accessible to all. That was, and still is, our big idea.
