The ribeye steak is traditionally known as ‘the butcher’s cut’ because the butcher would reserve certain tasty cuts for himself, with the ribeye being one. This cut is taken from the upper rib cage, from the main muscle attached to the spine. This location is where muscles are underused with more fat and therefore, promising you a tender, well-marbled cut of meat.
