While most of us are sleeping soundly, the day boats are already heading in to Brixham market with their fresh catch. By 5.30am the market is at its most bustling with the traders surveying the days landings and readying themselves for the frenzy of the daily auction…

At Wright Brothers we’ve always been passionate about buying and selling the finest quality seafood, which is why it’s a huge deal for us to announce that we now have our own wholesale team based in Brixham, a town bursting with a proud fishing history on the picturesque Devon coast.

Our coastal team is made up of a fantastic group of guys who have been in the fish game for years, and some through generations of family. Each and every one of them has a real passion for what they do, and an understanding of how to cherry-pick the very best fish from the Brixham auction every day for our restaurants and our Billingsgate wholesale team.

Les Daniels heads up our team at Brixham, he has been in the fish game for over 30 years and what he doesn’t know isn’t worth knowing. Every morning Les picks the best fish to buy on Brixham market, he then speaks to our head chefs and with this they create the specials board. By that evening the fish is packed, prepped and on route to Billingsgate market, ready to be received by each of our restaurants – the ultimate sea to plate journey.

This new partnership puts us in the unique position where we have almost complete control over the fish we source, with an emphasis on sustainability, seasonality, maximising freshness and reducing fish miles. Even to the extent that we can share which boat landed the fish on your plate.

You can find most of our Bixham fish listed on our specials boards, but for January we are also offering a whole Dover sole at all restaurants for just £20 including a choice of seasonal salads. A long, slipper-shaped flatfish – Dover Sole alongside Turbot, is considered the royalty of fishes. Light, tender flesh and an elegant flavour, it is naturally one of the most expensive fish to market. However, to showcase our wonderful new team we are delivering you excellent value, and hopefully making January feel a little less blue!

Our whole Brixham Dover sole for £20 is available at all restaurants from 2nd – 31st January. It will be first come, first served each day so please indicate in the ‘special requests’ box on booking if you would like this special.
