The Falmouth oyster gatherers use zero-carbon boats to protect the wild native oysters that would diminish if higher technology was used. Hand-operated gears dredge the oysters from the beds and oyster fans say these are some of the best natives available. “The liquor is somehow saltier, the flesh sweeter,” says Clare Leveson of Slow Food.
