  • 2 large baking potatoes
  • 100g unsalted butter
  • 5g thyme

  2. With a small knife slice the potatoes into barrel shapes and cut in half lengthways
  3. Place the potato cut side down on a chopping board, with a chopstick on either side. With a medium knife, cut across the potatoes down to the chopsticks, making the slices as close as possible along the length of the potato
  4. Repeat this all four halves of potatoes
  5. Rinse the sliced potatoes under cold running water for 10 minutes, then drain and place in a baking tray, with butter rubbed over each potato
  6. Scatter the sprigs of thyme over the potatoes and place in a pre-heated oven at 180 degrees
  7. Cook for about 45 minutes, until golden brown
  8. Baste the potatoes with the melted butter every 10 minutes to ensure they crisp up and look lovely
  9. Before serving, season with salt and pepper and enjoy
